Grain-Free Minute Muffin in a Mug
One of my favorite snacks is grain-free minute muffin in a mug! When I began clean eating, I missed being able to have a quick tasty snack during the day when I was feeling a little hungry. I came across a recipe for a grain-free minute muffin in a mug and with a few tweaks to the recipe (that I mention below), I knew this might be the answer to my healthy snacking needs!
The original version of the recipe included baking powder and a liquid sweetener that really just didn’t work for me. With my new clean eating methods, I have made the decision not to use baking powder in any of my recipes as I don’t use cornstarch (which is a main ingredient in the baking powder). Through my online research, I’ve learned about the health risks of eating cornstarch which include weight gain, high blood pressure, cancer, anemia, constipation, ulcers, tooth decay and diabetes. Knowing that, I cut it from the recipe and the muffins taste just as great without it!
Also, I added flax seed to the grain-free minute muffins in a mug . Some call flax seed one of the most powerful plant foods on the planet and there’s some evidence it may help reduce your risk of heart disease, cancer, stroke, and diabetes. So why not add it to these tasty muffins?
So to get started, pick out your favorite mug or shallow bowl…obviously making sure it microwave safe! I use small glass pyrex bowl at home, but for these photos I stepped it up with a cute mug! First, you need to add butter or coconut oil and microwave for 20-30 seconds to get it all nice and melted.
Then, simple as that you add all other ingredients and mix well! From there you are ready to pop it into the microwave for about 1 minute. You want the muffin to be firm but still moist on the top.
Eat warm, straight from the mug! No need to dirty of any more dishes with this treat!

Grain-Free Minute Muffin in a Mug Recipe:
- 1 Tablespoon of butter or coconut oil
- 2 Tablespoons flaxseed
- 2 Tablespoons almond meal or flour
- 1 Tablespoon of cocoa powder
- 1 Tablespoon of Swerve
- 1 egg
Step 1: Add your butter or coconut oil to microwave safe mug or bowl and microwave for 20-30 seconds to melt.
Step 2: Add all other ingredients and mix well.
Step 3: Microwave for about 1 minute.
For a little salty with your sweetness, sometimes I sprinkle a few shelled pistachios on the top of my muffins! These snacks are great for whenever you have a craving for sweetness…I like to enjoy them first thing in the morning with my cup of coffee!
